For reasons unknown, more customers than usual have been ordering the Black-Back Perch Stew lately. While serving the dishes, I noticed a guest from Fontaine rinse the fish briefly in plain water before eating it.

Xiangling kept glancing at the guest. The ladle in her hand moved with more force than usual. Eventually, she approached and asked whether the dish was too spicy...

She then prepared a milder version of the Black-Back Perch Stew and brought it to their table. The guest appeared satisfied. They nearly finished all of the sauce.

When the restaurant grew quiet, Xiangling asked what I would like for my birthday. I told her I wished to learn how to make the milder version of the dish.
