Lore
Hotel Debord was founded by Modeste and Savelli, two Fontainian chefs who hailed from Fleuve Cendre. Their knack for exploring and utilizing ingredients found during said expeditions resulted in Fontainian cuisine becoming extremely popular over the years, and they created the restaurant sometime afterwards. Hotel Debord was an immediate hit among Fontaine's richest and discerning eaters, and their reputation skyrocketed.
Roughly ten years after its founding, the two came upon a container in some Remurian ruins sunken underground, which greatly heightened a user's taste buds. Modeste would use the container's contents to create the original Gateau Debord, which was considered the pinnacle of Fontaine desserts at the time, as sugar was not as accessible as it was in the present day. Because of the scarcity of this ingredient, the cake was only limited to sixteen orders a day, but its taste made it extremely popular as people queued up, wanting a slice of the legendary cake. Eventually, Modeste realized that long-term consumption of the secret ingredient caused his taste buds to be lost, and out of despair, committed suicide. Modeste's now-estranged partner, Savelli, would receive a letter from Modeste, realizing the ingredient was the cause of calamity. Knowing that if the truth was leaked to the public, both Modeste and the Debord's reputation would be tarnished forever, and he voluntarily chose to implicate himself behind Modeste's death in order to protect both of them.
Shortly after Savelli's demise, the Debord's reputation quickly plummeted, with many people seeing it as a cheap place to eat. Eventually, through careful and proper management, the Debord's reputation has returned to its original standing over several decades. Many chefs work in the Debord, and a renowned item is the Codex Debord, a book containing all of Modeste's original recipes. This book is exclusively for current and former head chefs of the Debord, with copies being made as needed.
Prior to the Traveler's arrival in Teyvat, the head chef at the time was Escoffier. Originally, it was supposed to be another chef as the former head chef had appointed a successor, but the hotel offered their kitchen to Escoffier after learning she was appointed as Furina's chef. In the ensuing cook-off, both the former head chef and their successor believed that Escoffier was more fit to run the restaurant. Following a food safety incident regarding lumiline (which had actually been placed by another chef, Monica), Escoffier took responsibility despite the fact that the case was a minor matter and was sent to the Fortress of Meropide to serve out her sentence. She subsequently gave up her position to Savanna, who managed to keep the crew together in Escoffier's absence.
During the events of Escoffier's Story Quest, Dulciaria Structura Chapter: Act I - Treasured Above All, Escoffier returned to the Debord after being convinced to do so by Navia when trouble arose. When the situation was resolved, Escoffier told Savanna that she would not return to her former position, but she would periodically visit the Debord to ensure that the dishes were up to standard.
